Vendredi dernier, Mix en bouche organisait une petite sauterie annonçant l’ouverture du restaurant éphémère les grandes tables de l’île. L’occasion de savourer les créations culinaires imaginées par le chef étoilé Arnaud Daguin, de se perdre dans cette structure métallique dessinée par le tandem de 1024 architecture Pier Schneider et Francois Wunshel et de danser sur les rythmes electro d’invités de marque tel Etienne de Crecy. Un moment festif qui nous amènera sûrement à revenir déguster des plats biologiques dans un décor atypique qui disparaitra d’ici quelques années.

Later on, we’ve been to the very old Etter distillery. In 1840, Johann Baptist Etter, a farmer at the time, already made a name for himself as a good cherry distiller. His son, Paul, turned making “Kirschwasser” (cherry “water”) into his main occupation more than 135 years ago. Etter Kirsch has existed ever since.

Marc Bretillot, designer et plasticien, prend l’expression « faire à manger » à la lettre. En utilisant des aliments comme matière première de son design, ce mangeur invétéré a découvert en 1999 que l’intelligence des papilles et celle de la main engendraient un terrain de recherche inexploité et fécond. Un mouvement est né, le design culinaire, entouré d’un vif succès dès sa création.

Premier ouvrage en Français consacré à cette discipline, Culinaire design retrace l’itinéraire de Marc Bretillot, des premières expérience dans son atelier de Ménilmontant aux installations et performances pour des institutions ou événements réputés comme la Fondation Cartier, les Designers Days, le Restaurant Éphémère du Palais de Tokyo, la Grande Epicerie de Paris ou encore le fooding pour Häagen-Dazs, Ikea et les champagnes Krug…
Culinaire design rend également compte de rencontres créatives au sommet avec de grands chefs complices et de l’organisation de workshops culinaires intrépides dans les écoles supérieures dont, bien sûr, l’ESAD de Reims, où Marc Bretillot enseigne cette discipline à des étudiants venus de toute l’Europe.
